Dry Fried Chicken In Szechuan Style


Ingredients
  • Chicken breast 2
  • Spring onion 1
  • Red capsicum 1
  • Egg 1
  • Green chilies 3
  • Kashmiri chilies 4 – 5
  • Chicken stock ½ cup
  • Carrot 1
  • Ginger 1 piece
  • Garlic 3 – 4 cloves
  • Crushed black pepper 1 tsp
  • Crushed red pepper 1 tsp
  • Vinegar 1 tbsp
  • Black pepper powder ¼ tsp
  • Soya sauce 2 tbsp
  • Chili garlic sauce 2 tbsp
  • Oil 2 tbsp
  • Corn flour 3 tbsp
  • Oil for fry
  • Salt to taste
Method
  • Cut 2 chicken breast into juliennes.Also cut 1 spring onion, 4 – 5 dry red chilies, 3 green chilies, 1 carrot and 1 red capsicum into juliennes.Marinate chicken with salt to taste, ¼ tsp black pepper, half beaten egg and 2 tbsp corn flour. Now fry marinated chicken till golden brown. Remove and keep aside.
  • In another pan heat 2 – 3 tbsp oil, add 1 piece of chopped ginger and 3 – 4 cloves of chopped garlic. Sauté for 1 – 2 minutes.Now add sliced red chilies and sliced green chilies. Fry for 2 – 3 minutes.Then fried chicken add all the fried vegetables. Cook for 1 – 2 minutes.
  • Add 1 tsp crushed black pepper, 1 tsp crushed red pepper, salt to taste, 2 tbsp soya sauce and 2 tbsp chili garlic sauce. Mix well.Now add ½ cup chicken stock and cook till it comes to a boil.Thicken sauce with corn flour paste and then dish it out. Serve hot.
